Germany’s Neggst has announced the development of two new vegan egg products — Poached Neggst and the Neggst Sunny Side Up.
© NeggstThe poached egg alternative features a running “yolk” and is suitable for use in dishes such as breakfasts and salads. The Sunny Side Up provides an alternative to fried eggs and can be eaten with avocado toast, English breakfasts, or in a burger.
While not yet available to purchase, the new products are said to be coming soon. They were recently exhibited at the trade fair INTERNORGA alongside Neggst’s existing vegan egg products — the Patty and Bites.
The Neggst patty is designed for burgers, breakfast muffins, and savoury croissants; it can be eaten cold, or prepared in just a few minutes. The bites are available in two flavours — Sun-Dried Tomatoes & Basil and Chives & Paprika. They can be eaten as a topping or a snack.

Transforming outdated food systems
Neggst products are made using a legume-based recipe free of soy and gluten. Unlike conventional eggs, they are high in fibre and cholesterol-free. They are also rich in protein, zinc, magnesium, calcium, and iron, and fortified with vitamins B12 and D.
In 2022, Neggst raised €5 million for its vegan egg alternatives in a round led by Green Generation Fund. Last year, co-founder and CTO Verónica García Arteaga was named a Food Hero by V-Label for her work to transform outdated food systems.
“The mass production of chicken eggs uses an unnecessary amount of resources,” said García Arteaga in a statement. “Factory farming simply does not feed humanity efficiently. Neggst’s idea is to combine science and sustainability with the enjoyment of traditional egg dishes. With this passion at Neggst, we want to make a contribution to improving the health of the population and animal welfare. We also want to reduce CO2 emissions and waste fewer resources.”
