Throwing a cosy autumn dinner? These 9 vegan dishes are guaranteed showstoppers

Cosy nights, glowing candles, and vegan comfort food—here’s how to capture the spirit of autumn in every bite

As the temperature dips and the leaves begin to crunch under our boots, something about the season calls us inward.

Maybe it’s the golden sunlight softening through the window, or the ritual of pulling on a favourite sweater—but autumn always feels like a return to rhythm.

And for me, that rhythm begins in the kitchen.

Cooking has always been about more than ingredients—it’s about memory, tradition, and the way a single dish can make people feel at home.

Fall, with its bold colours and comforting aromas, is the season that reminds me most of that connection.

It’s the backdrop to family parties that stretched late into the evening, big tables crowded with cousins, and the occasional jack-o’-lantern glowing quietly on the porch.

Hosting cosy dinners now is my way of carrying that spirit forward. A table glowing with candlelight, a spread that celebrates the harvest, and friends lingering long after the plates are empty—that’s the heart of autumn cooking.

These nine vegan dishes are designed to bring that spirit to your table.

They highlight seasonal produce, balance ease with elegance, and invite everyone—vegans and non-vegans alike—to take part in the magic.

So let’s set the scene: twinkle lights strung above, an old record humming in the background, maybe even a pumpkin or two in the corner, and these dishes ready to share.

1. Maple-glazed delicata squash rings

Delicata squash is the host’s best-kept secret. No peeling required, roasts in under 30 minutes, and when sliced into rings, it transforms into golden flower crowns.

It’s the kind of dish that feels right at home on a fall party table—somewhere between the bowls of cider donuts and the candy corn everyone swore they weren’t going to touch.

What you’ll need: delicata squash, olive oil, maple syrup, smoked paprika, sea salt
Pro tip: roast at 425°F for 25 minutes until caramelized. Sprinkle with fresh thyme before serving.

2. Chai-roasted carrots with tahini drizzle

Warm chai spices meet the natural sweetness of roasted carrots, creating a dish that tastes as inviting as it smells.

The scent alone could take me back to childhood Halloweens—coming in from trick-or-treating with cold fingers, the house filled with cinnamon, cloves, and something baking in the oven.

What you’ll need: carrots, chai spice mix (cardamom, cinnamon, ginger, cloves), maple syrup, tahini, lemon juice, garlic
Hosting tip: they hold beautifully at room temperature—prep ahead and serve without stress.

3. Caramelized onion and mushroom tart

Flaky vegan puff pastry topped with jammy onions and earthy mushrooms. It looks refined, but comes together easily.

It reminds me of family parties where the savoury trays always emptied first—guests balancing plates on their laps, going back for “just one more square.”

What you’ll need: vegan puff pastry, onions, mushrooms (cremini or shiitake), balsamic vinegar, thyme, olive oil
Presentation idea: cut into squares and arrange on a wooden board with rosemary sprigs.

4. Butternut squash risotto with crispy sage

This dish pairs creamy risotto with the subtle sweetness of butternut squash and a crisp sage garnish that makes every bite feel special.

There’s something timeless about it—the same kind of comfort as warming your hands around a mug of cider at a fall festival, or sneaking marshmallows from a cousin’s hot cocoa.

What you’ll need: arborio rice, butternut squash, garlic, onion, white wine (optional), veggie broth, sage, vegan butter
Pro tip: fry extra sage—you’ll want it on everything.

5. Roasted beet and walnut salad with citrus vinaigrette

Earthy beets, peppery greens, and toasted walnuts brightened with a citrus vinaigrette. A refreshing contrast to heavier mains.

At family potlucks, there was always one bright, colourful dish to balance the sea of casseroles. This is that dish—fresh, vibrant, and essential.

What you’ll need: red and golden beets, arugula or mixed greens, walnuts, oranges (juice + zest), olive oil, Dijon mustard
Hosting tip: dress just before serving to keep the colours vivid.

6. Sweet potato and black bean empanadas

Flaky hand pies filled with spiced sweet potatoes and beans—perfect for passing around and dipping into sauces.

They remind me of bonfire nights in October, when we’d trade candy for something warm, savoury, and filling. Handheld comfort food that disappears faster than the ghost stories get told.

What you’ll need: empanada dough (store-bought or homemade), sweet potatoes, black beans, cumin, garlic, chili powder
Serve with: avocado crema or smoky tomato salsa.

7. Vegan mac and “cheese” bake with rosemary breadcrumbs

Comfort food, elevated. Cashew-carrot “cheese” sauce delivers the creaminess, while rosemary breadcrumbs add crunch and aroma.

No matter the holiday, there was always a dish everyone hovered around—and this is that dish. Familiar, nostalgic, and the one guests will scrape clean.

What you’ll need: elbow pasta, soaked cashews, carrots, nutritional yeast, garlic, lemon juice, breadcrumbs, rosemary
Make-ahead: assemble in advance; bake when guests arrive.

8. Harvest wild rice pilaf with cranberries and pecans

Nutty rice, tart cranberries, and toasted pecans come together with sage for a dish that feels festive and inclusive (it’s naturally gluten-free).

It carries the spirit of holiday mornings—pecans toasting in the oven, voices rising in the kitchen, and someone sneaking a taste before the platter reached the table.

What you’ll need: wild rice blend, cranberries (dried or fresh), pecans, celery, onion, sage, veggie broth
Pro tip: let it rest 10 minutes before serving to meld flavours.

9. Baked apples with oat-pecan crumble

The simplest of desserts: tender apples filled with a spiced oat-pecan crumble. They perfume the kitchen as they bake and beg for a scoop of vegan vanilla ice cream.

It’s a dish that feels like fall at its purest—like walking home from trick-or-treating with a sack of candy but finding that the warm baked apples waiting at home are somehow the real treasure.

What you’ll need: large apples (Honeycrisp or Gala), oats, pecans, maple syrup, cinnamon, nutmeg, coconut oil

Serve with: vegan vanilla ice cream or coconut whipped cream.

Final thoughts: let fall flavour do the work

The best autumn dinners aren’t about elaborate menus—they’re about warmth, second helpings, and guests asking for the recipe before dessert is served.

These vegan dishes don’t just nourish; they create atmosphere. One that says: Come in, get comfortable, you belong here.

So light the candles. Pour the cider. Set out a pumpkin or two. And let the season do the rest.
