I love leeks and I love to grill pretty much any vegetable I have in the fridge. When you add the vegan feta cheese, you make this a perfect entrée.
- 12 leeks
- 1 1/2 cup vegan feta cheese
- extra-virgin olive oil, salt, and pepper to taste
- zest of 1 lemon
- fresh herbs (dill, thyme, and rosemary)
Preparation
- 1 Clean the leeks by removing the ends and the first 3 or 4 layers. Boil the leeks in salted water for 10 minutes.
- 2 When they are fully cooked, drain them and squeeze out as much water as possible.
- 3 Grill the leeks on a hot cast iron grill (if inside) or on your outdoor grill until a few grill marks appear.
- 4 Crumble a quality feta cheese and set aside.
- 5 Arrange the grilled leeks on a serving plate and drizzle a generous amount of extra-virgin olive oil; add salt (or salt flakes if you have them) and pepper.
- 6 Sprinkle the vegan feta cheese uniformly all over the leeks and sprinkle the finely minced fresh herbs and lemon zest. Enjoy warm with some good bread or crostini.
