Recipe: Tuffy's Table vegan orange chicken

Trying to get fit for summer can be tough, especially when you get those gnarly food cravings, like orange chicken. Thankfully, there are alternatives. Tuffy’s Table is bringing you a recipe for spicy orange tofu that surprisingly tastes no different from the real thing. 

Tofu is a great alternative to chicken in this dish. If cooked properly, it can mimic its texture and consistency. What I love most about tofu is that it is packed with protein, which makes me feel less guilty when indulging in this healthy rendition of a Chinese takeout classic. 

Spicy orange tofu is sweet, packs heat and is crunchy with a soft inside. Paired with brown rice, this dish will leave your cravings satisfied. 

This is a vegan dish, which means that it is made without any type of animal product. I am not vegan, but for health reasons, I have lowered the amount of meat that I consume. At first it was hard because I was limiting myself to leafy greens.

 When tofu came into my life, it changed everything. This is just one of the many ways you can use and cook tofu. Hopefully this serves as a great introduction to the vegan community's undying love for the famous bean curd. 


Ingredients:

Tofu Nuggets

-       Tofu 400g (Pressed) 

-       3 tablespoons of cornstarch

-       Salt

-       Pepper

-       Olive Oil for frying 

Sauce

-       ½ cup of orange juice

-       2 tablespoon of soy sauce

-       4 tablespoon of maple syrup 

-       1 tablespoon of ginger

-       1 jalapeno (Diced) 

-       2 green onions

-       2 tablespoon of cornstarch 

-       3 tablespoon of water

 Brown Rice

 -       1 cup of brown rice

-       2 cups of water

-       salt

Instructions:

1) Start with your rice because this will have the longest cook time. Rinse 1 cup of brown rice. In a small pot add olive oil and turn on high heat. Add your rice and stir. Let the rice fry a little before adding your water. Once the water is added, bring water to a boil. Lower temperature so that water simmers and cover with a lid. The rice will continue to cook for 40 minutes, this will give you enough time to cook the spicy orange tofu.

2) After pressing most of the water out of your tofu, rip or cut the block into bite size chunks and put  into a mixing bowl. 

3) Add your cornstarch, salt and pepper to the bowl of tofu. Mix thoroughly so that all the pieces are evenly coated. This is important for the crunchy texture of the nugget.

4) Next, heat up oil in a medium to large skillet. After a few minutes add your tofu to the pan. Fry until golden brown on both sides. Then set the nuggets aside.

5) In a large saucepan over high heat, add your orange juice, soy sauce, maple syrup, ginger, jalapeno, green onion, cornstarch and water. Mix all the ingredients together until your sauce becomes thick. Continue to stir your sauce over medium to low heat. 

6) Add your tofu nuggets to the orange sauce you just created and mix. Make sure to evenly coat each nugget. Leave on low heat.

7) By this time your rice should be ready. Make sure that all water has evaporated from the pan. If so, you can fluff and mix your rice to make sure it is not stuck to the pot.

8) Now you are ready to plate your dish. Place two scoops of rice onto a plate and add your spicy orange tofu on top. For extra flavour I add more green onion.
