You'll Never Guess What The Vegan Singing Chef Uses for 'Pepperoni' In These Vegan Pizza Bagels

Founder of One Great Vegan, she’s all about vibrant, delicious food, using allergy-friendly ingredients—that are also gluten-free and plant-based.

And considering everyone is always down for pizza (in any of its many forms), we asked her for her Vegan Pizza Bagels recipe, which uses trumpet mushroom stems in lieu of real pepperoni.

During the pandemic, Gabrielle took her “Colourful Cooking Classes” virtually and was able to perform and educate even broader audiences on the benefits of putting more plants on the plate. Vegan Pizza Bagels

Ingredients

  • 2-6 Little Northern Bakehouse Bagels
  • ½ cup chopped fresh basil or micro greens
  • 1 cup pizza sauce of choice
  • 1-2 cups vegan cheese
  • 2 Tbsp red pepper flakes

Mushroom Pepperoni:

  • 2-3 trumpet mushroom stems
  • 3 Tbsp vegan butter
  • 1.5 Tbsp minced garlic
  • 2 Tbsp steak or pork seasoning
  • 1.5 Tbsp apple cider vinegar
  • 1.5 Tbsp maple syrup
  • 1.5 Tbsp vegan Worcestershire Sauce
  • 1.5 Tbsp smoked paprika

Directions

  1. Set the oven to 415F and line a baking sheet.

  2. Chop up trumpet mushroom stems into thin Pepperoni-sized circles.

  3. In a large pan, on medium-high heat melt vegan butter and sauté the chopped mushroom stems on both sizes.

  4. As you sauté the mushroom pepperoni add in the Minced Garlic, Steak or Pork Seasoning, Apple Cider Vinegar, Maple Syrup, Vegan Worcestershire Sauce and Smoked Paprika. Make sure every mushroom is well covered in butter and seasoning.

  5. While the mushrooms are cooking in the pan, lay out the bagel halves, cut side facing up, next to each other on the lined baking sheet.

  6. Spoon on pizza sauce to every bagel half and then add on vegan cheese. Make sure they are well covered.

  7. Once the mushroom pepperoni is a bit crispy, soft and cooked through, add them on to the loaded bagels. I like to add 3-4 pepperoni per bagel half.

  8. Bake the baking sheet of pizza bagels for 8-16 minutes or until the cheese is melted on top.

  9. Garnish with fresh herbs, vegan feta cheese, crushed red peppers, and micro greens.

  10. Sing your song. Do your dance. Speak your truth and enjoy some pizza bagels!
