Vegan cheese brand launches ‘world’s first’ plant-based mozzarella pearls

Award-winning vegan food brand Julienne Bruno has unveiled its latest innovation, Mozzafiore Pearls, a vegan alternative to classic mozzarella pearls

Julienne Bruno is breaking new ground with its latest innovation, offering a plant-based twist on a classic favourite – vegan mozzarella pearls.

These revolutionary plant-based pearls, inspired by traditional mozzarella but crafted entirely without dairy, will be available exclusively at Whole Foods Market UK (Kensington & Piccadilly stores) starting 9th January 2025, priced at £3.95.

Using soybeans and traditional cheese-making techniques, Mozzafiore Pearls achieve a springy, soft texture and creamy tang through natural fermentation. They are nut-free, coeliac-friendly, and contain no artificial aromas or flavourings, making them an inclusive option for people with dietary restrictions.

The pearls are ideal for use in salads, pizzas, pastas, sandwiches, or as a marinated treat with olive oil and herbs.

Founder Axel Katalan describes the product as a world first: “Our Mozzafiore Pearls are a first of their kind – a completely new concept inspired by the world of mozzarella pearls, but crafted entirely without dairy. After over two years of development, led by our Head of Product Development, Albert Adrià, we’re thrilled to bring something entirely new to the dairy-free category.”

Taking inspiration from Italian cheesemaking traditions to create the new product, Katalan explained: “We named it Mozzafiore Pearls out of respect for Italian cheesemaking heritage, not to replicate mozzarella but to continue the tradition of creativity it represents.

“Mozzarella pearls were once a new idea themselves. ‘Fiore,’ meaning bloom in Italian, reflects the product’s delicate nature, while ‘Mozza’ honours the craft of hand-stretching curds, a technique mirrored in our batch-made process.”


Meet the team behind the innovation

Julienne Bruno boasts an impressive team, including Katalan, who previously worked with gastronomic icon Alan Yau MBE; Head of Product Development Albert Adrià, a Michelin-starred trailblazer; and Chief Commercial Officer Sunjiv Shah, formerly of Uber Eats UK. Industry luminaries like Alan Yau and Jan Zijderveld, former President of Unilever’s European business, serve as advisors.

Christian Meermann, founding partner at Cherry Ventures, lauded the launch: “The Julienne Bruno team has created and brought the best tasting dairy-free, plant-based cheese to market.”

The brand has already garnered glowing reviews from home chefs and industry experts alike. Philip Khoury, Head Pastry Chef at Harrods, called the products “a rare stroke of gastronomic ingenuity,” while James Elliot, Founder of Pizza Pilgrims, declared them “absolutely delicious.”
