“Hey yo, it’s J-Wro rocking out here on the J-Wro Show,” begins our exuberant host, Chef Jason Wrobel, author of Eatery, setting the stage for a plant-based breakfast revolution. Amongst many things, Jason, previously host of How to Live to 100 on the Cooking Channel, not only hosts the J-Wro show, but he also works closely with Olympic medallist Dotsie Bausch, the founder of Switch4Good, an organization that promotes plant-based alternatives to dairy. So, for the record, this is a totally dairy-free waffle.

Ok, now back to the show.  Jason launches into the creation of a salted caramel sauce that’s both healthy and indulgent because… nothing says “I love you” like making that special someone a health-conscious caramel concoction, right? Using unsweetened coconut milk, coconut nectar, yacon syrup, vanilla extract, and a carefully curated spice mix including mesquite powder, sea salt, and cardamom, J-Wro crafts a sauce that’s as nutritious as it is delicious. Crafting the Perfect Waffle


On to the waffles! With all the enthusiasm of a kid on Christmas morning, Jason Wrobel guides us through the waffle-making process. The base is a pre-mixed, gluten-free pancake and waffle mix because… who has time to mix their own gluten-free flour blends? Ground golden flax seeds serve as an egg substitute, and ground cinnamon adds a cosy aroma. Mix these with coconut milk, coconut nectar, extra virgin coconut oil, and vanilla extract, and voila, you have a batter that promises to become crispy, golden waffles.

“Brush the surface lightly with a little bit of melted coconut oil,” Wrobel advises, adding yet another layer of coconut flavour to our coconut-centric recipe. As the waffles cook, the kitchen fills with an aroma that’s sure to lure even the sleepiest of breakfast sceptics to the table.
