This super speedy vegan rosemary and garlic-infused olive oil would make a fantastic gift. It only takes 5 minutes to make, but is wonderfully fragrant
Having a flavoured olive oil at hand when you’re cooking can really help to give your vegan recipes added depth of flavour. And this combo of garlic and rosemary is definitely a winning one.

Ingredients (Servings: 1)
- 350 ml olive oil
- 2-3 cloves garlic
- 3 sprigs fresh rosemary, washed and thoroughly dried
Method
- Slightly bruise the rosemary stalks to release the flavour.
- Place the garlic and rosemary into a saucepan with the oil and simmer for 5-10 minutes.
- Leave the oil to cool completely.
- Pour the infused oil into a clean, dry bottle with a secure lid.
- Store in the fridge and allow to infuse for at least a week.
- Consume and store for up to 2 months.
Cooking tip
Choose your type of olive oil according to its intended use.
Extra virgin olive oil is best for drizzling over salad or dipping bread, while mild
and light olive oil is best for cooking.
